Product Description
A very fine, light flour, obtained from the heart of the wheat kernel and very low in minerals, which gives it its white color and soft texture. This T45 flour is perfect for delicate pastries, such as cakes, cookies, pastries and pastry shells. Recipe examples: babas, beignets, brioches, kouglofs, savarins, tarts, friands, galettes, mille-feuilles, palmiers, pithiviers, tarts, tourtes, croissants, pains au chocolat. Its finesse also makes it easy to incorporate ingredients and knead, so preparations are homogenous and light.

Tips for use and storage

Its high protein content gives it a softer texture and higher leavening capacity than traditional wheat flour, a guarantee of success for all pastries and leavened doughs.
